Brussels Sprouts

Brussels sprouts are a vegetable native to ancient Belgium near the city of Brussels. They are small leafy green buds which resemble miniature cabbages in appearance.  

One interesting characteristic of Brussel sprouts is the way they grow. In structure, each sprout consists of clusters of stiff leaves superimposed in compact layers giving it a round or globular shape like cabbage.  They generally measure about 2.5-4 cm in diameter. The sprouts are produced all along a stalk, starting from the base and moving upward. Each stalk has approximately 15-20 sprouts on it.

Brussels sprouts are loaded with vitamin A, folacin, potassium and calcium. They have 3-5 grams of fiber per cup and are only 25 calories per 1/2 cup cooked. Brussels sprouts are also particularly rich in Vitamin C an anti-cancer agent. In addition to being one of the most powerful foods in fighting disease and providing nutrients, they are also one of the tastiest vegetables.  Brussels sprouts, if cooked properly, have a sweet nutty flavor.
