The Value Added Vegetable Category encompasses a wide range of items. Simply put, it includes any vegetables that are not packed into the carton in the field. This category includes items as basic as iceless broccoli, which is cut to size in the field, brought to the shed, pre-cooled and packed into a special breathable bag or carton. It also includes a complex salad mix that can contain up to 15 or more different items including chopped lettuce, cabbage, baby leaf, radicchio, carrots, etc., along with packets of salad dressings and other condiments.
Value Added is the fastest growing category in the United States for both the food service and retail sectors. Consistency, convenience and variety of items available are all major factors in their success. While cutting a vegetable affects its shelf life, we can still preserve good quality and freshness when proper refrigeration is maintained. Generally Value Added items have a shelf life of 14-21 days but each item is different.
